College: Parkinson appeared in 39 games (21 starts) during his collegiate career at Stanford. He was a Second-Team All-Pac 12 selection and a semifinalist for the John Mackey Award in 2019 after hauling in 48 passes for 589 yards and one touchdown as a junior. He started all 12 games for the Cardinals that season. As a sophomore in 2018, he earned All-Pac-12 honorable mention and recorded 29 catches for 485 yards and seven touchdowns. Parkinson also registred an eight-yard touchdown pass against Oregon State in 2019 and became the first Stanford nonquarterbak to throw a touchdown pass since Christian McCaffrey in the Pac-12 Championship in 2015. He also became the first Cardinal to throw for a touchdown and record a touchdown reception since McCaffrey in that Pac-12 Championship game. Parkinson's seven touchdown receptions ranked third in the nation among tight ends that season. He also tied a single-game school record with four touchdown receptions (a program record for tight ends) against Oregon State in 2018. Parkinson appeared in 14 games as a freshman in 2017 and he totaled 10 catches for 97 yards and four touchdowns on the season.
Personal: Parkinson played his high school football at Oaks Christian and earned varsity letters in football and basketball. He was a five-star recruit, according to 247Sports, and a four-star recruit according to Scout, Rivals and ESPN. Parkinson totaled 80 catches for 1,280 career receiving yards and eight touchdowns and helped lead his team to a pair of league titles. Parkinson majored in civil engineering.
